Restaurant Boompjes by Jaap Volman is suited in Overloon in the Netherlands. Before he openend is own restaurant in 2018, Jaap worked for restaurant Bolenius in Amsterdam led by Michelin star chef Luc Custers. Luc is one of the founders and ambassador of the Dutch Cuisine foundation. Jaap toke with him everything he learned from his master. And within in a year he brought his restaurant at number 90 of the world’s best vegetables restaurant.

For me Jaap is one of the promising chef’s I met. And so it was an honour that he asked me to photograph in his restaurant and work with him.
